Food is more than sustenance for many of us it’s about passion, pleasure and memories!! Whether you love to cook or not it is hard to find anyone who eats just for survival – with the exception of those in the most tragic of circumstances around the world.
Food is sensory: taste, smell, texture, visual
I know people that dislike a variety of foods because of the texture and feel in their mouth rather than the taste of it. A crew member I used to worry about due to her limited intake of fruit and vegetables (potatoes, tomatoes, creamed spinach, avocado and mushrooms), her excuse was the way certain food felt in her mouth. The only way I could get her to eat a variety of veges was soup – as long as it was pureed she would love every one I produced;
- Thai Pumpkin
- Zucchini (Courgette) Lemon
- Celery, Apple & Ginger
- Roasted Vegetables & Thyme
- Carrot, Orange & Cumin
- Spice Roasted Pepper
To name but a few.
One thing I’ve learnt from working as a chef on yachts and cooking for a variety of inidividuals is that most people know what they don’t like and that’s a great basis from which to experiment and try different recipes out for them. Even the seemingly dullest of pallets can be excited as long as you understand the basis of their preferences or dislikes.
My motto in the Galley (yacht kitchen) when plating meals:
‘If it looks good it tastes good’
